To serve 2-4
1 x Onion
1 x clove garlic
Olive oil
Half a chilli pepper or sprinkle of chilli powder (depends how spicy you like it)
1 tin organic chopped tomatoes
200g red lentils (I just guess so my soup is a little different each time and always good)
Veg Stock cube or finely chopped fresh herbs (your choice)
Lightly cook the garlic and onions until soft. Add the tomatoes, lentils, herbs and chilli and stir well. Add enough water to completely cover the mixture plus a bit extra (you can check on this whilst the soup is cooking and if the lentils soak up the water, add enough to recover the mixture – try not to add a lot to begin with as otherwise you may end up with a watery instead of a thick soup) and simmer over a low-medium heat for 45 minutes. Allow to cool for 10 minutes then mix in a blender. If you wish to thin the soup you can add some soya milk and warm to taste. Delicious and oh so easy!
