Lentils have always been a favourite of mine so I am so pleased they are so good for you and so versatile!

Being high in fiber, protein, iron, calcium, zinc and B vitamins, lentils are an imprtnat addition to a vegan’s food cupboard.

High fiber foods can help protect against bowel problems and the vitamins in lentils can aid the digestive and nervous systems.

Red lentils are perfect in soups and casseroles and you can experiment with varieties to your delight e.g dahl lentils are gorgeous in a curry. Try making lentil pate (yes, I will get round to adding that soon), lentil and bean tortillas or lentil and potato cakes. You will never get bored and remain strong and healthy with a balanced diet that includes plenty of pulses like this!
