I wanted to share this recipe because my kids and anyone else who has come into contact with these absolutely loved the outcome. Apologies I don’t ever measure - it’s more fun that way!
Potato, Lentil and baked bean cakes:
A cup of Red Lentils (pre-cooked for around 10 minutes just in boiling water then drained)
Mashed potato (or ready to go mashed potato mixture)
Flour (just to take the stickiness out of the mixture)
Couple of spoons of cooked baked beans
Optional herbs
Mix everything up (make sure lentils well drained). Add touch of water or soya milk to mixture if needed to get a patty like consistency. If too much add a bit more flour or some breadcrumbs or oats. Heat a frying pan, drizzle pan with olive oil, form the cakes into whatever shape you like - fishes or triangles for example - and cook until crisp on each side, cool a bit, and serve with a salad.
