Chocolate Cake

So many times I am asked how it is possible to make cakes without eggs. Well, here’s another one for you!…

2.5 cups flour

1.5 teaspoons baking soda

3 tbsp Cocoa Powder (I sometimes mix half cocoa powder and half vegan drinking cocoa but again this is a shout vegan recipe which means feel free to experiment to find out what you like best!)

2 tbsp blackberry jam (you can use apple puree instead to give a different taste)

Third Cup Olive Oil

1 cup water

Optional extras: chopped walnuts or amlonds, sprinkling of cocunut, vanilla or almond essence (4 or 5 drops).

This is the quickest, easiest cake you will ever make! Just put all the dry ingredients together and mix, then add the wet ingredients and mix. Put in a cake tin and cook on a medium heat (180 c/350f) for around 40 minutes (check at 30 mins by inserting a skewer and if it comes out clean or almost clean it is done, otherwise put back for a bit longer). Cool completely and ice with a chocolate icing (icing sugar, cocoa and a splach of soya milk) or butter icing (vegan marg, icing and a splash of soya milk). Pop in the fridge til the icing hardens and serve. Voila!
